The new organic “Cœur de Nature” champagne from Champagne Devaux is flying the flag for the Côte des Bar

It’s a big first for Champagne Devaux, the iconic Champagne House located in the Aube department. Devaux is finishing 2021 in style with the release of its first organic certified champagne made exclusively from Pinot Noir.

Champagne Devaux is already well known for its exceptional savoir-faire and commitment to sustainable winemaking but it has gone even further this year with the launch of a new organic champagne. It is the latest addition to its “Terroirs de Coeur” range created in 2018 which already includes the Cœur des Bar Blanc de Noirs and Cœur des Bar Blanc de Blancs.

Cœur de la nature - at the heart of nature

The release of the organic Cœur de Nature champagne marks the culmination of a long conversion process to sustainable winemaking at Champagne Devaux which was initiated in the 1990s and includes a strict set of specifications and techniques such as plot selection and inter-row grassing. The Champagne House’s associate winegrowers have been encouraged to adopt organic winegrowing techniques and around 100 of them now adhere to the “Devaux Quality in the Vineyards” Charter. This charter was created with the help of winegrowing consultants selected by Devaux to draw up specifications that apply not only to the work carried out in the vineyards but to those in the vat house and cellars too. We can assure you that Devaux isn’t doing things by halves when it comes to its organic growing and winemaking practices!

This champagne was created with a mission, that of establishing a set of winegrowing practices based on an individual operations charter that goes above and beyond standard organic winegrowing specifications. Close technical monitoring is also carried out at each key stage of the winemaking process and every effort is made to ensure that the grape pressing respects the characteristics of the terroir from which the grapes derive.

Devaux’s associate winegrowers have truly done themselves proud and devoted themselves to producing exceptionally high-quality fruit for the Cœur de Nature champagne whilst also protecting our winemaking heritage as no pesticides were used. As for sulphur, the minimal amounts contained in this champagne would make any self-respecting volcano shudder! This organic champagne from Devaux is produced using respectful growing practices resulting in a champagne with an intensely mineral style.

A champagne that stands out from the crowd

Generally speaking, the soils in the Côte des Bar produce fresh, crisp champagnes owing to the combination of clay and chalk in their make-up. But perhaps that does not sound quite exotic enough?

It wasn’t for Cœur de Nature and they preferred to offer us a richer, more citrus character creating an overwhelming impression of warmth, sunshine and orange trees. Perfectly ripe grapes, organic growing practices and the youthfulness of this champagne have resulted in a unique style that contrasts with the rest of the range and stands out for its incredible freshness.

This wine exudes primary aromas of bergamot and dried apricots underpinned by white flowers.

This fruity champagne pairs beautifully with traditional Christmas fare. It makes the ideal partner for tempura prawns, foie gras, scallops, mature cheeses such as Chaource, and even a lemon and chocolate ganache for dessert.
