Les Bauves, the latest gem from Maison Lombard

In Champagne, single-vineyard wines are becoming increasingly popular with Champagne Lovers for the way in which they pay tribute to the terroir, so Grappers decided to visit Épernay to taste the latest single-vineyard champagne from Maison Lombard: Les Bauves.

This "Maison Vigneronne" is affirming its terroir philosophy, which is skillfully perpetuated by Thomas Lombard, at the helm of the family domaine. Since he took over as managing director, Thomas has worked tirelessly to develop the Lombard business. At the heart of his work was the creation of the "Terroir" range, a collection of Brut Nature champagnes that draw out and showcase the character of the cru from which they originate.

The latest arrival? Les Bauves, an ode to the terroir of Cramant, Grand Cru. We took a look at Maison Lombard’s latest gem, due for release in March 2021.

This 5th lieu-dit champagne completes the Champagne House's "Terroir" range. Skillfully vinified by Lombard's cellar master Laurent Vaillant, the "Les Bauves" champagne gives us an unusual expression of the Chardonnay. Produced from the 2015 harvest, a vintage known to be sunny, it expresses itself with great freshness and a full body. "A remarkable balance between mineral power and aromatic concentration", says Laurent Vaillant.

When tasted, Les Bauves reveals a very expressive nose with the freshness of citrus fruit and overtones of tangerine, pomelo and kumquats within an intense chalky texture. The palate is precise and concentrated. It is a surprisingly well-honed champagne with subtle oak that is perfectly blended into the fruit, which adds complexity to the aromas. The finish is luscious and the Brut Nature dosage leaves a chalky salinity on the finish.

Les Bauves will pair perfectly with carefully and subtly spiced dishes, such as grilled sea bass with sweet spices or filet mignon with ginger.
