The iconic Salon Champagne House based in Le Mesnil-sur-Oger, which only produces its champagnes in the best years, officially announces the launch of its 43rd vintage in over 100 years of existence.

Today the Champagne House is launching its 2012 vintage, a vintage that puts a smile on your face. Take a closer look and you’ll see why: a single terroir, the Côte des Blancs, a single cru, Le Mesnil-sur-Oger, a single grape variety, the Chardonnay, and a single year, that of its vintage. It is in line with the philosophy established by the founder, Aimé Salon, who set himself the mission of creating an unprecedented Blanc de Blancs for his own drinking pleasure.

But 2012 was not the easiest of years. It liked to tease us, playing around with meteorological extremes: frost, rain, frost, rain, heatwave, drought... The result: the vines were too dry and then too wet, nothing good was expected to come from it, not even abundance. But then, what a surprise! A few weeks after the harvest, a great wine emerged in the vats, making light of the year's disastrous weather with a smile on its face.
This smile, crafted by Salon, is full of energy and endowed with a strong minerality, purity and directness that create a generous length on the palate: basically, it has more than enough to bring a smile to your face!

Champagne Salon 2012 with the senses

This is a great Champagne to be enjoyed with the senses, starting with the eyes. The 2012 reveals a very luminous light gold colour with tiny green reflections, heralding a fine drinking experience.
On the nose, the minerality of Salon is present. The chalky soil and the pebbles mingle with the fruity and floral notes of dried roses inviting us to taste it, finally.
Although it should be served barely chilled (13-15°C), Salon is bursting with freshness and offers good length and body, releasing exotic notes of pineapple and lychee, and a smokiness, suggesting an exceptional ageing potential for this wine with a faultless structure.

Champagne Salon 2012 with food

For this gastronomic wine, the food and wine pairing should be based on minerality: langoustine tartar, scallops marinated with kombu or Daurenki imperial caviar. In terms of meat, a filet of milk-fed Corrèze veal with white asparagus and morels is the suggestion.

The operative words are smile, dream, love. So, one piece of advice: treat yourself!
