Bruno Paillard 2012 Assemblage, the expression of its original terroirs
A while ago, we had announced here the launch of a first 2012 vintage cuvée from Champagne Bruno Paillard, a Blanc de Blancs Champagne.
The house just launched its new opus from the same vintage “Assemblage 2012”, named « Sillon ». A generous and sunny wine, illustrated with a piece of art.
Sunny and generous. This is what comes out of this 2012 cuvée, which provided us a great champagne vintage. In spite of 2012 harsh climatic difficulties, the grapes benefit from a wonderful richness and a great ripeness.
The « Sillon » vintage is an Extra Brut composed of eight great terroirs, divided into 60% Pinot Noir and 40% Chardonnay (20% of its wine are barrel aged). It benefits from 8 years of cellar ageing, and of a year of rest after disgorging, in order to let him recover from his emotions.
The eye :
The « Sillon » cuvee has a pretty golden color with fine and persistent bubbles.
The nose :
The nose gives hints of stone fruit, Bigarreau cherry and white peach, dried fig, followed by honey scents mingled with ginger. After a few minutes comes cocoa aromas and ashy notes.
The taste :
A chiseled wine with a precise attack that transcribes the nose well and that seduces with its gourmet taste its persistent saline freshness.
The piece of art
The artwork is chosen by both Alice and Bruno Paillard, according to the feeling that the wine conveys. Concerning the cuvée « Sillon », it is a piece of art by Claude Viallat. It represents a parallel about the House’s work on the expression of the uniqueness of each vintage.
Wine and food pairings
The cuvée Assemblage 2012 « Sillon » from the House Bruno Paillard will perfectly match with a nice fish, slow-cooked lamb, and even meets the challenge of matching with spicy dishes.
