Elected Best Craftsman of the Year 2011, Philippe Mille, a forty years old, brilliant man, trained to become a pastry chef, has been working at Les Crayères for the past 10 years. He gained his experience from prestigious establishments, such as le Pré Catalan, Lasserre, le Ritz, le Meurice, and Drouant, to name only a few. Philippe Mille is a calm man, who enjoys maintaining friendly and professionnal relationships with faithful producers, and walking in the woods with his daughter, hoping to be able to teach her about nature, and the way it contributed to his education. The market gardeners from Les Crayères Audrey and Benoît Deloffre are both astounding. The young couple, produces, onto 3 hectares of land located in Romain, and, exclusively to fulfill Les Crayères’ needs, everything that I need and look for in optimum quality. Their carrot variety, for instance, is incomparable. Their red berries as well. I was at the origin of this "garden", which is, of course, completely organic! Even if I was born in the city of Le Mans, I grew up in the countryside, and I always needed close contact with farmers and local producers, as well as with the earth. The producers I work with – there are 52 of them – are all established within an area of 80 kilometers at the most. Also note that the Deloffre couple, (market gardeners from grandparents to grandsons), sell formidable mini vegetables on Saturday mornings, at the Boulingrin covered market. However, one must get up early if one hopes to be able to buy some…
